Spray a 23 x 23 cm (9 x 9 in.) baking pan with cooking spray or brush with vegetable oil. Then combine the oatmeal, skim milk, sunflower seeds, flour, maple syrup and eggs in a food processor. Process it for about 10 seconds until the mixture is almost smooth. Pour in the cranberries, apricots and almonds. Now spread the mix into the prepared dish. Sprinkle some coconut on the top, and bake for 20 to 25 minutes or until the edges are golden and the centre is set. 2.
